    Sienesa Pecorino is a variety of soft and buttery cheese made of ewe’s milk. Freshly obtained cheese has a sweet flavor, however with seasoning it gets slightly spicy smack. Its colors correspondingly vary from white to different shades of yellow. It is also characterized by a compact cylindrical shape. Sienesa Pecorino is produced mainly in the province of Siena from November to June.
