Fried zucchini blossoms, stuffed with cheese, is a masterpiece of the Italian cuisine.

Florentine chefs love zucchinis for their golden yellow bloom as it's not only pretty, but also edible. They simply stuff them with cheese, anchovies and other fillings and fry the flowers with olive oil. Zucchini flowers are sold either separately or attached to medium-sized squash. Late spring and summer are considered to be the most appropriate time to taste freshly fried zucchini flowers in Florence.
