Fuki is the first greenery to sprout underneath the snow and is one of many tasty mountain vegetables (sansai) in Japan.
Fukinoto is the young fuki plant with the stalk, flower bud, and leaves.
The most popular ways to consume it are Fuki-miso and tempura dishes, giving the food a special spring flavour.
