The onset of corn season brings a lot of joy for corn lovers who can sample a range of seasonal dishes made of the delicious vegetable. The most popular offers include pastel del choclo which resembles a cake made from a mix of meat, olives, boiled eggs, and onions covered in liquid corn dough. Another popular corn meal is known as humitas—these are steamed or boiled cornmeal cakes cooked in corn husk wrappings. You should also try porotos granados, which is a thick vegetable stew with white beans, basil, and corn of course. These traditional corn dishes are available only during the summer months.
