It is natural that coconut-derived snacks are so popular in Jamaica, as if you look around you will indispensably notice at least one coconut tree. One such food, the all-time favourite of young and old Jamaicans, is coconut drops. This is the way to use shatters of dried coconut meat rather than the flakes.
Coconut drop, also known as cut cake, is a traditional Jamaican dessert. Its name comes from the cooking method—a hot blend of diced coconut, caramelized brown sugar, ginger, and spices are dropped onto a banana leaf, to cool down. The amount of spices depends on your taste and how adventurous you are.
No worries if you don’t have a banana leaf, waxed paper will do fine.
