Oursinade is a beach picnic where you dive for oursins (sea urchins) and then eat right on the beach. Urchins are truly delicious, however, be careful and wear gloves so you don't hurt your hands. Corsicans simply rinse them in the sea and eat them fresh with some bread. Urchins come in different colors, from purple to black. Inside they can be yellow or red, and the flavours differ as well. Urchins are available from autumn till spring. If you don't want to dive for them, you can also try them in some beachside restaurants.
