This eggplant-based dish associated with the times of Ottoman Empire has lots of regional varieties in the countries among the Mediterranean Sea. The most popular variety is Greek moussaka, as you may have guessed. Its many ingredients are sorted into layers and baked. This iconic dish is composed of fried aubergines, tomatoes, mincemeat, potatoes, cheese, and a white sauce made of butter, flour, and milk. Additionally, a number of aromatic ingredients like garlic, onion, allspice, and cinnamon are always included. Sounds delicious, but tastes way better! Layered Greek Moussaka is available during eggplant season, namely from June through September.
