One of the most emblematic foods of French cuisine is the black truffle. And it's definitely the main reason why many tourists come to Provence in winter. The region is the centre of black truffle culture in France and almost all truffles consumed around the country come from here. The truffle season starts here on the first Saturday after the 15th of November with a costumed parade of the Fraternity of the Black Diamond in the truffle capital of France—the small village of Richeranches. People dress up in medieval costumes, play music, dance, and sing in provençal. After that, the truffle market opens, where you'll find all kinds of this black treasure. Aside from the market, some farmers offer traditional truffle hunts, tastings, and great Provençal meals.
