Courgette Balls or Kolokythokeftedes Featured in
Fresh courgettes are used to make a delicious starter which is often eaten before the main course. Courgette balls are made of a pureed vegetable mixed with various spices like mint or dill. The starter is served with tzatziki, a Greek-styled sauce made of yoghurt, cucumbers, and garlic. Courgette balls may be enjoyed during the zucchini harvest season, namely from April through October.
