Judging from the ban on fish, meat, and other animal products like dairy and eggs, one might suppose that fasting season is a disaster for gourmets—though it's not so! Lent has its own merits even in terms of food, and one excellent example is a fish roe dip named Taramosalata. This is made of pink or white fish roe blended with bread or potato base and drizzled with virgin olive oil and lemon juice. It perfectly complements lean meals during Lent and other fasting seasons, like before Christmas or the Dormition of the Mother of God. According to established traditions, some people actually fast on Wednesdays and Fridays.
