On the 11th of November, Austrians celebrate St. Martin's Day. In past times, this was the period when farmers had to give parts of their harvest away. Today there is a custom to eat special dishes, such as goose with Blaukraut and bread dumplings, called Serviettenknödel.
This bread dumpling is shaped into a roll and boiled using a special napkin (Serviette), which is how it gets the name. The filling of the Knodel differs according to the region.
