Cashew, also known as Marañón, botanically is considered to be a fruit. It looks rather unusual with red or yellow peducle (the pseudo-fruit) that connects the actual fruit to the tree. Rich in oils, the nut must be boiled or roasted in order to be cleared of toxins. This healthy snack is sold at a lot of markets, especially at the Pacific Coast of Costa Rica, where they grow in plentitude. The highest season is around the end of March.
