Hierbas Ibicencas in Ibiza 2025

Every household in Ibiza makes its own unique Hierbas Ibicencas. The recipes are carefully kept secret and handed down from generation to generation. This purely local specialty is made of either sweet or dry anise liquer as the bases of the beverage and a plenty of various strong-scented healing herbs, including primarily thyme and rosemary, but also mint, camomile, lemon balm, verbena, fennel leaves, juniper, orange, and lemon.
Such herbal mixture is aged in a bottle throughout a year and consumed at all possible occasions: as a medicine helpful against cold or indigestion or merely as a delectable indulgence after a meal. The beverage is cooked during the months of April and May when Ibiza flourishes with herbs. A year later, but not a day earlier, Hierbas Ibicencas is ready for consumption. Home-made Hierbas is said to be way better than shop-bought.
