Autumn and winter will impress visitors with the variety of meat dishes available. Restaurants offer plenty of game, including wild boar, hare, and pigeons. A dish that has to be ordered in advance, “pâté de merle/sansonnet,” is a Corsican specialty with grilled pigeon and thrush.
