Lovo in Fiji 2024

Fijians love Christmas and prepare a special dish "Lovo" particularly for the occasion. Traditionally locals cook it in an earth oven. Inside the oven they put firewood, and only when the wooden sticks turned to charcoal and heated the stones, can you cook Lovo.

This tasty food consists of chicken, or sauced mutton (palusami) and garlic and spice. Then this it is mixed with coconut cream and wrapped in Dalo leaves. After such a process the "dish" is put into the earth oven on the hot stones (looks like a BBQ). The more Lovo you have, the bigger oven (hole) you need.
