Portuguese boast to have the cod recipe for each day of the year. But the most famous is salted cod or bacalhau. The recipe appeared on non-freeze days when cod had to be transported by sailing ships from the North Atlantic. Dried and liberally salted fish had a chance to be preserved during transportation. Bacalhau is used for numerous dishes of Portuguese cuisine throughout the year but is the most popular on Christmas table.
