Kichiji

Kichiji, also known as Kinki or Menme, is bright red in colour and has huge eyes. The flesh is white and oily and has an exquisite taste. It is usually simmered and served with soy sauce. You can find this fish in restaurants around the Tsukiji Fish Market in Tokyo.
