The crawfish season is not just a time period, it is a celebration! There is nothing in the world that New Orleanians would prefer over, and during this time these little sea creatures are the kings of all the meals! Look for the rare blue crawfish to get a unique taste or for a less rare white one, or just eat whatever you see! Our advice would be not to eat the straight crawfish and remember that it is always "crawfish", never "crayfish"!
