The Ecuadorian cuisine is strongly based on a large variety of seafood. So if you are an epicure, you are strongly advised to visit the Galapagos and try the local famous dish Ceviche de Canchalagua, which is made of the same-named mollusk, and local delicious lobsters. The taste of the fresh seafood will drive you crazy. But keep in mind, fishing is usually permitted from September through December, but may be prohibited if the mollusks were not harvested substantially. That is why, it is essential to check for respective information prior to arrival.
