Locro in Argentina 2025
A delicious mix of meat, corn, and seasonal vegetables

Locro is one of the national dishes of Argentina. The dish is a hearty corn-based thick stew with meat. People prepare it in various ways. Some add pork, some beef, sausages, or smoked bacon (pancetta). Other ingredients are vegetables, especially corn, seasonal spices, and herbs to add rich flavour. One important condition—the dish should be served hot. Of course, Loсro goes great with Argentinian wine!
Traditionally Locro is eaten during autumn and winter months. You'll find it on the menu from April to November. Besides, it's particularly associated with the celebration of the Argentine revolution (May 25th).
