In autumn you can find a real Hong Kong delicacy - hairy crab. It is served at many places as an appetizer or dim sum. A crab season starts from October and lasts to end of November. The crab got its name due to patches of brownish hair around the claws. These crabs are rather small, but the meat is delicious, and the dish can be quite expensive.
The female and male species have different tastes. The females are harvested in Ocober and have a sweet and intense flavour. The males harvested in November are more chewy and bigger.
