Scottish seasonal Lemon Sole fish is particularly delicious when served with the Mediterranean sauce. The fish fillets are topped with a savoury mixture of sliced zucchini and chopped tomatoes in the vegetable stock with a few spoons of red wine and seasoned with various herbs, red onion, and a clove of garlic. Lemon Sole is caught in Scotland at the same time as when zucchini is harvested—between June and September.
