Pitaya or Dragon Fruit

The fruit of the night-blooming cactus widespread throughout Guatemala occurs in a great variety of colours both inside and out, but the most common species is red-skinned with a light purplish-red pulp. It is used to make iconic Guatemalan yoghurt smoothies known as licu​ados, and also in preparation of margaritas—both famous for magenta colouring. The season for red dragon fruit ​locally named pitaya or pitayana falls on June through November.
