Andalusian Gazpacho in Spain 2025
It may be a flavourful soup and a cool summer drink at the same time

Gazpacho is a famous Spanish soup that originated in Andalucia. It's made with raw tomatoes, cucumbers, sweet peppers, onions, garlic, some olive oil, and Spanish sherry vinegar. It's served cold, rarely in bowls but mostly in glasses, often with the addition of finely chopped vegetables and toasts.
The dish is just perfect for the summer heat when the air temperature is too hot to eat anything at all, and you'd like to drink something cold and flavourful at the same time. May–September is also tomato harvest season.
