Dolphin fish, llampuga, mahi-mahi, dorado—all these names refer to the same species of fish. It is in the top five of the best to hunt for near Mallorca.
Due to the high popularity of dolphin fish in the Balearic region, Mallorcans have developed possibly the best recipes with it. Dorados grow up to 40 kgs, so most of the dishes use only parts of its loin. The most famous across the island is llampuga with honey sauce and llampuga with peppers.
Peak fishing season occurs between August and October. This is when only fresh product is served in restaurants.
