Skrei is another name for cod, the largest commodity in the Norwegian fish industry. However, Skrei is way better than cod, as this name refers to a mature fish, that has reached 5 years old and therefore migrates back to its birthplace to spawn. The name originated from the Norse word "skrida" meaning "wander." Skrei is prized for its particularly white flesh and is considered the world's healthiest whitefish containing the daily norm of omega-3 fatty acids. To preserve its nutrients Skrei is to be packed within 12 hours after it was caught and it has to be stored on ice at a temperature from 0 to 4 degrees Celsius. Skrei season lasts from January to April.
